Sweet Potato Pie Recipe With Vanilla Ice Cream

    Materials

    Bread pan

    medium cooking pot

    Food processor (or blender)

    parchment paper (optional)

    Ingredients

    4 Caribbean potatoes (purple skin) 800g?? or 400g

    2 ripe bananas (150g)

    1cup brown sugar

    ½ cup (250g) coco milk

    ½ cup evaporated milk

    2Tbsp softened butter

    1Tbsp grated ginger

    1Tsp nutmeg

    1Tsp cinnamon

    Pinch of salt



    Directions

    Start by thinking how you are going to enjoy your Potato Bread!

    Preheat oven to 350 F, and line your mold with parchment paper

    1. Peel skin off potatoes, pass through food processor until smooth (45 seconds -1min)
    1. Meanwhile, mash bananas with a fork
    2. In a large bowl, combine all ingredients together including potato mixture, lightly stir with a spatula
    3. Transfer to a buttered mold, with parchment paper

    Cook for 1h30, or until top golden; let settle for 10 minutes before serving







     

    Serving Suggestions :  with vanilla ice cream, draped with some kremas, or coffee
