Materials

stir frying pan 

Large Mixing bowl (to be able to dip fish in flour mixture)

Spatula 

fork 

Food processor (marinade mix)

Ingredients

2  Sebaste fish 

2 cups of flour 

6-8 garlic cloves

375g salted  butter 

½ tsp Chives

½ tsp Parsley

½ tsp Onion powder

½ tsp Garlic powder

½ tsp Paprika

½ TBSP Marinade mix

¼ cup of finely chopped red onions 

pinch of pepper

pinch fresh thyme


Marinate mix :  


Onions, garlic, olive oil, scallops,  red and green peppers

Directions

Directions : Marinade mix

  1. Add to food processor : all ingredients 

  2. Process for about a minute or more  : mix in food processor until  make a marinate, like a sauce consistency

  3. After properly cleaning fish : vinegar, water, lime,  salt , then rinse with cold water. Ready to marinade

  4. Drench and cover fish in marinade  making sure to fully cover, set on plate to refrigerate

  5. Cover with wrapping and allow to marinate in fridge for at 30 minute (while you prepare the flour mixture)


Directions Floured Fish : 

  1. Using a large mixing bowl, add flour and all spices , mix with a fork (or with your hands :). Set aside until you are ready to cook fish

  2. Drape in flour mixture, and lay in frying pan, repeat until all fish cooked

  3. Fry each batch for 6-7 minutes, for the insides to have time to cook ( depending on your fryer) until golden 

Enjoy with some rice,  plantains, or with some potatoes. This is usually served with our sauce recipe with

plantains, and rice :) 


This can be served with rice or potatoes
