Herring & Cod Fish Recipe
Mortar and pestle or a small food processor
Cod Fish : packaged cod fish is usually salty so it needs to be soaked overnight, in cold water, and stored in airtight bowl in fridge until ready the next day ready to cook. Use enough water to soak all cod fish needed for recipe.
Herring Filets: We recommend herring that is packaged because we can be sure of freshness and of course, much easier to cook with. Prior to cooking, take off as much of the bite size bones as possible. Then, cut the herring filets into small pieces and add to pot.
2-4 smoked herring filets ( we use Merex)
Packaged Cod fish to taste
1/3 cup vegetable oil
½ cup diced onions
½ cup diced green or red or yellow peppers
1 scotch bonnet pepper
finely chopped parsley
pinch of salt
pinch of pepper
Start by thinking how you are going to enjoy your meal !
- Drain cod fish and add to pot with herring filets
- Add oil, epis, onions, peppers, allow to sauté for 6-8 minutes on low heat
- Add scotch bonnet pepper, allow to sauté for another 2 minutes, heat on low.
- While still hot, generously smear some on your plantains, or some hot bread
Serving suggestion: with a nice salad!
